I welcome you to my plots, at the foot of the Rocher de Cotignac, for a rare immersion in the daily life of an olive artisan. During the visit, you will discover the life of a Provencal orchard, the rhythm of the seasons, the gestures of the trade, the local varieties and the secrets of olive maturity. Here, everything is lived with the senses: - the fragrance of leaves heated by the sun, the song of cicadas, the texture of the fruit under the fingers, - the light that slides between the rows of olive trees. We had a superb visit to the Olive Grove yesterday followed by beautiful olive oils to taste. Gilles came and met us and we followed him by car to his olive grove deep into the countryside. He was superb in describing the grove, the trees and the countryside to us in very good English. It was fascinating to hear how the trees are pruned and how the olives are then harvested both in November and December. The biodiversity of the grove was amazing to see with all the wild flowers and herbs used for the cross pollination. It was interesting to hear the development of the olives and how the olives harvested in November differ to those later in the year. It was also good to understand the risks associated with the growth through the year and how natural sources help fight any disease and also how fire can be hopefully prevented. The grove was so tranquil and beautiful, it was a thrill to visit. We then went back to Giles’s shop in Cotignac where we tasted 5 different olive oils and heard how they could and should be used in different cuisines and dishes; also the length of time each oil could be kept. They were all delicious. This was a brilliant visit and Gilles is inspirational in changing his career to grow olives (the only grower in Cotignac and infectious with his enthusiasm. We were 3 adults and an 11 year old and we All highly enjoyed the visit. For anyone visiting Cotignac, I would highly recommend the visit and the tasting and we will be back to visit the shop before we leave. Thank you Gilles !!
