Chef Federico Alessandri is a qualified chef who has studied under several Michelin Star chefs (at ''A Tavola con Lo Chef'' cooking school- 3 Diplomas and 4 master courses) and he has worked in several different restaurants in Rome. This culminated in him becoming a personal chef and having the pleasure to cook for the rich and famous. He has traveled around the world teaching Italian cuisine.

The lesson, or otherwise known as an ‘educational party’, would begin at 10A.M. and comprises of instruction and hands – on practise in making 3 different pastas (one pasta long,one short, and one stuffed), accompanied by 3 delectable sauces, followed by a served dessert. (*Menu structure can change according to seasonal ingredients) Fine Italian wines are included. The lesson will take approximately 5 hours, including the meal. More than just the recipes, cooking methods are taught along with creative presentation of the plates. Unforgettable tricks and tips are given throughout the lesson. The menù is seasonal; whether it be cooking with wild asparagus, fresh produce from the vegetable patch, or mushrooms or truffles-Chef Federico Alessandri can explain not only the recipes, but the ‘how’ and ‘why’ of Italian cuisine.The cooking school is set in a professional kitchen which overlooks the surrounding olive orchard from which we produce our own delicious extra virgin olive oil. A tour of the historical tour of our medieval Casale is also included. It is also possible to enjoy a quick swim after the class in our black infinity pool.

Out of all the cooking classes I’ve been to in Italy, Federico’s class is the only one that truly teaches you how to be an Italian chef. His knowledge of food science, and how he incorporates it into the class, are unparalleled

Our group of 8 adults had a fantastic time participating in the one-day cooking experience. Louise was a kind and informative host, giving us a tour of some of the property including the charming chapel. Chef Federico provided a fun and educational experience - we appreciated his wit and high standards. We learned to make a pasta dish, gnocchi, and a simple chicken dish. The kitchen set-up is spacious, professional, and efficiently run, and the overall property is gorgeous. This was a perfect way to spend a rainy day.

An extraordinary experience! Breathtaking views! A magical villa brimming with remarkable history…a great way to transport yourself back in time. Peaceful. The gorgeous, kind host and the full of life chef were so much fun to be around. The 5 hour cooking course was fun and educational. I learnt so much about making pasta, gnocchi and the mother sauce! The meals were scrumptious. The wine flowed and their olive oil is divine…bursts with flavour! I highly recommend this trip and will certainly go again myself. Perfect for a couple or with friends.

A very hands on experience not just a demonstration prepare to learn a lot have fun and get you hands dirty (with ingredients). Chef Frederico has a great sense of humor made the entire experience absolutely fantastic, he has a great partner and staff and a lovely history filled facility. I’d wish we’d known they’re also an inn would’ve loved to stay a night or two in the property.

The three of us booked the full day experience with Chef Federico and his staff and his wife, Louise. This was an investment in time (over 5+ hours + driving there and back added an additional 2 hours to the overall timeline). Therefore we wanted to make the most of the day. We wanted to both learn new cooking techniques, but also learn greater depth of "why do you ___" and also have an incredible meal (assuming we followed Federico's instructions... "Yes, Chef !") We were not disappointed in anyway. Warmly greeted, we were welcomed onto the property, and Louise quickly made a connection with us. Introducing us to Chef Federico and his kitchen-hand, Ruby, we quickly learnt that Chef is funny, very knowledgeable and a skilled teacher. Chef would show us a technique and we mimicked, encouraging and guiding we found ourselves competently making three different pastas with three different yummy sauces with antipasto course and served a refreshing seasonal dessert to cleanse our palate. The red and white wine provided from beginning to end was excellent . We learnt numerous tips and hints that our really great foodie and cook (adult) daughter didn't know. Overall, we left as friends as well as happy (and blissfully full) customers. Highly recommend you visit here over potentially other closer or maybe 'cheaper' cooking classes in the greater Umbria region as we have experienced others before... and this experience exceeded our wildest expectations.

My friend and I - both pretty serious home cooks & gardeners - learned so much from this experience. Chef Alessandri was an excellent teacher: personable and entertaining, with a wry sense of humor and a breadth of knowledge and experience. The preparations he led us through were delicious and pure, while the techniques respected and brought the best out of the ingredients. We are coming home with valuable skills that we will use in our own kitchens. The Casale was so beautiful; I really hope we can return as guests of the manor one day. Louise and the staff were so kind and generous. It's inspiring to see people driven by what they love to do and bringing it off in such style. This cooking class is highly recommended, especially if you already have some facility in the kitchen and want to up your game.

Had 1 :1 class eir6h Chef Federico. Learned a lot about the techniques of sauce, fresh pasta, and gnocchi. Excellent teacher. Class was in English, but I understand a lot of Italian. Highly recommend the venue abdt the class in a beautiful setting.

My husband and I had 3 amazing nights at Casale Alessandri. A truly beautiful location, cozy and welcoming with the added bonus of amazing food. Louise and Federico ensure you are well cared for and very well fed. The rooms are amazing, each one unique, interesting and comfortably appointed. Louise ensures your stay is perfect and provides lots of recommendations for touring around the area. Federico’s class in an outstanding kitchen which brings the surrounding outdoors inside is an adventure. He shares his knowledge and passion for cooking in an entertaining manner which makes the 5 hour class fly by. I highly recommend Casale Alessandri for couples, or a family, friend or work retreat. An unexpected surprise was the pool with a view of the Italian countryside…. Love this place!
