Here we’ll stop at a traditional Bolzano bar, where you can taste delicious canapés topped with speck and Bauernschinken. Speck is a dry-cured, smoked pork aged between six months and two years, infused with a blend of spices that give it its distinctive, savory flavor. It’s often served with traditional breads and pickled cucumbers, making it a true taste of the region. Bauernschinken is a cooked ham seasoned with the same spice blend as speck, offering a unique and flavorful cold cut that perfectly complements the local culinary tradition.

We were guided by the very kind Sharon Pancher, who illustrated in a very detailed but not boring way the various aspects of the city, its peculiarities, and its traditions.
