Speaking of wine, you’ll start this adventure with a cold glass of Prosecco, because every masterpiece (cheese or otherwise) deserves a sparkling kickoff. Then, it’s showtime. Led by an expert cheese maker, you’ll learn how to transform fresh curds into perfect little bocconcini, twist up some nodini, braid treccine and dive into making burrata and the ultra-luxurious stracciatella (spoiler: you’re going to want to lick the bowl). Expect creative pairings like stracciatella with bottarga and lemon zest, plus a few secrets from the Simbiosi kitchen that you’ll absolutely be bragging about later. To top it all off? A guided wine tasting featuring both organic and conventional wines lets you sip, swirl and debate your favourite while soaking in the delicious chaos you just created. The whole process was excellent. From booking to cheese making to dinner afterwards, everything was pleasant, efficient and enjoyable. Our instructor was knowledgeable, friendly and supportive. We were a family of four that included two teenagers. Everyone made them feel welcome and accomplished. The food and beverages were fantastic! We all enjoyed our experience very much!

We loved this class. Was easy for everyone to follow along and fun to learn about mozzarella making. Few in our group were Gluten Free and this location provides food and snacks for those with gluten intolerance.

It was such a fun! If you have never tried it, you MUST! We were guided perfectly, every detail and every step were explained so clearly that we didn’t have a single doubt we could make it. Moreover the mozzarella we’ve made was actually good and tasty. After the cooking glass we had a very rich aperitivo tasting local wines and the mozzarella we’ve just made. I highly recommend for everyone who comes to visit Florence!

We were thrilled to discover a hands-on mozzarella-making class right in the heart of Florence, and it absolutely lived up to every expectation. From the moment we arrived, the experience was both educational and genuinely fun — a wonderful combination that isn't always easy to find. The highlight, of course, was the mozzarella filata — we got fully hands-on, learning the traditional art of stretching and shaping the curd ourselves. There's something incredibly satisfying about pulling your own fresh mozzarella, and the instructor made the whole process approachable and engaging. Best of all, we got to take our homemade creations home to enjoy later! While we waited and worked, we were treated to an outstanding spread: authentic wood-fired pizza, creamy stracciatella, a generous selection of Italian cured meats, and excellent wine of course, paired with mozzarella. Everything was fresh, flavorful, and so authentically Italian. This experience was the perfect way to close out our April trip to Italy. If you're visiting Florence and love food, culture, and great company — don't miss this class. It's a memory you'll carry home right alongside your mozzarella.

We loved making cheese with Jess! It was so interesting to learn the process, and try to replicate the knots and braids. Lunch was also fantastic! This was so much more of a unique experience than making pasta or pizza. Highly recommend!!

The whole experience was excellent. The restaurant atmosphere was fantastic. Our guide and teacher in the class was very well prepared, very friendly, and brought forth the local culture and cooking practices of Florence. I would highly recommend it.
