After a warm welcome, you’ll begin by exploring the foundation of Japanese flavor: umami and dashi. One of the most distinctive aspects of this class is that you’ll get to see how three types of dashi—kombu (kelp), katsuobushi (bonito), and awase (combined)—are made right in front of you, and enjoy a rare opportunity to taste and compare each one side by side.
Next, you’ll watch a demonstration of how to prepare traditional Japanese side dishes and miso soup. The plating process itself is a fun and engaging part of the experience.
You’ll then try your hand at making fluffy dashimaki tamago (Japanese rolled omelet) using a rectangular tamagoyaki pan, and finally, choose from a variety of traditional fillings to make and shape your own onigiri (rice balls) by hand.
This immersive class offers not only hands-on cooking but also a deep understanding of Japan’s culinary heritage.

Discover the heart of Japanese cuisine in this hands-on cooking class in Tokyo, designed for curious travelers and food lovers alike. You’ll dive into the world of umami—Japan’s savory “fifth taste”—by learning how to make traditional dashi (soup stock) from scratch. Then, get hands-on as you shape your own onigiri (rice balls) with a variety of classic fillings, and cook fluffy dashimaki tamago (Japanese rolled omelet) using a traditional rectangular pan. A demonstration of miso soup and side dishes is also included to complete your washoku experience. No prior cooking experience is needed, and all instruction is in English. You’ll receive a printed recipe set and Japanese seasonings to take home, so you can recreate the flavors of Japan in your own kitchen. Perfect for pairs or small groups—come hungry and leave inspired!

Incredible experience! You learn so much of the basics of japanese cuisine and how to make the fundamentals including dashi and all the dishes you can make from it! Making your own onigiri is incredibly fun after eating so many at the kobinis

Super nice instructor and chef. Had an insanely filling meal. Didn’t know Dashi was everything and the base of Japanese cuisine. Now I can make it at home. From apps to deserts. 100% worth visiting in my opinion.

It was great! I learned about the different types of umami — something I hadn’t realized had so many types, and had the chance to cook a dish incorporating umami flavors. It really helped me understand how umami enhances the taste of food.
