It is believed that curry came to the Caribbean with indentured servants after slavery was abolished. The influence of curry on Caribbean cuisine is huge. Each island has their own special variation of spices that they call "curry". Many debates have been held in kitchens as to which island has the best curry… But all agree that curry and roti is one of those comfort foods that people crave after being off island for a while.
Nicole explores all the many faces of curry while she creates a meal that fuses a little of the old styles with newer Western flavors. Visitors will learn about the history of curry, its health value, and short cuts that can be used to create various curry based meals. The goal will be to make it easy for visitors to go home and cook the same menu whenever they wish.
Take this class not just to explore new flavours, but to enjoy the experience of cooking with new friends in a West Indian home with great view of the Caribbean Sea!

Join Nicole on this hands-on cooking class and explore all the many faces of curry while she creates a meal that fuses a little of the old styles with some newer western flavors. Nicole will teach you how to make curry chicken (and tofu for vegetarians), make the unleavened flatbread known as roti, and all the sides and dessert. Then enjoy a three-course lunch that includes all the recipes for the class. Once lunch is ready, you will enjoy the three-course festival of flavour sitting on a veranda with a beautiful view of the Caribbean Sea. Nicole teaches her classes in a very informal way explaining the history of the food and telling stories about living in the West Indies. Hands-on cooking class using recipes for a 3-course lunch exploring West Indian chicken curry and roti. Monday - Saturday, 11 AM - 3 PM. Only 10-20 minutes from the Harbour and airport.

5.00Nicole was amazing! She was funny and sweet and knowledgeable. We were so excited to spend the day with her learning how to cook curry chicken. Her house was amazing and so was her husband Adam. After we were done cooking we got to sit on her amazing patio with a breathtaking view of Antigua and enjoy the meal we (myself and my husband) had just prepared alongside with Nicole and her husband. If you ever plan to go to Antigua, go check her out. It is well worth the experience.

5.00Lovely experience! Nicole opens her beautiful home to teach how to make Caribbean dishes. Relaxed well planned, and delicious. She provided great guidance and simple instructions! Printed menus for all dishes were provided for us to take home. Highly recommend!

5.00Absolutely amazing. Nicole was wonderful as a host. She has a great knowledge of the island and is a friend to all. We did the curry class and learned much about the different types of curry and their variations. The rum punch is very beneficial for one’s health. It was a great day.

5.00Coordinating curry with Nicole was a highlight of our visit. The menu was an exquisite combination of spicy, savoury and sweet. Nicole was entertaining and her home has a welcoming terrace with a spectacular view! Enjoying our meal al fresca was delightful!

5.00One of our favorite things we did on vacation. We learned so much and the food was sensational! Nicole and her assistant were so fun to hang out with for the afternoon, We added on a rum tasting with Adam and it was super informative and tasty. The property was stunning. Would 100% say this is a can’t miss.

5.00Much much more than a cooking class. Great venue, views, rum punch, local tips (so try to go at the beginning of your trip!). So fun and worth every penny.
