Between November and March, due to fewer flight connections and lower tourist demand, tour schedules may be subject to change. During this period, visits are usually grouped into 2–3 days per week to ensure the minimum number of participants.
Take part in an authentic experience at a family-run masseria set in the Apulian countryside near Ostuni. Meet an expert master cheesemaker and join a mozzarella workshop explaining every step of the traditional production process. Observe up close the key moment of mozzarella stretching (filatura), the heart of Apulian cheesemaking tradition. Visit the masseria and the farm and discover its history, values, and production philosophy. Explore the stable with cows, calves, and pigs, the vegetable garden, and the milking area to understand the full agricultural and dairy cycle. Enter the dairy facility and see the technologies and techniques used to produce cow’s milk mozzarella, burrata, stracciatella, and other typical cheeses. The overall tour was very well structured and managed very well by Daniela a young lady speaking very well English (and French). It was super interesting and we could really understand how Mozzarella is done from cow to plate. The lunch basket that was part of the package was ok. What wasn’t nice is the fact that the groups are made of 20 persons (we were actually 25 since a family joined last minute) and consequently it was definitely too much: we could hardly hear the explanations, we could not all enter in the different rooms, we were tight … that is a pity. 15 should be the max to enjoy fully the tour.
