The Sool Company is founded by Julia Mellor, the first non-Korean specialist in Korean traditional alcohol. We are all passionate sool enthusiasts and you will experience makgeolli like no other! Our education space is also a functional brewery and extensive bottle-shop curating alcohols from all over the country. Step into our world of sool and have an unforgettable experience!

Learn to make your very own makgeolli with this entertaining and comprehensive makgeolli brewing class! Led by our local specialists, who have years of experience in the Korean alcohol industry, this class will take you through the fundamentals of brewing makgeolli with engaging, hands-on instruction. At our makgeolli brewery in Hyehwa, our experts will guide you through the different kinds of sool and fermentation techniques that make Korean alcohol truly special. You’ll then have the opportunity to sample some of our delicious, home-brewed makgeolli before you move on to the practical part and make your own! We take you from the very beginning stages of washing rice to the final filtering process, and make sure to equip you with all the knowledge you need to continue brewing makgeolli long after you leave. At the end of the class, you'll have the option to take home a kit with all the basic ingredients you'll need to recreate your own brew, or take away a bottle of makgeolli instead! We are a fully functional makgeolli brewery, so you can rest assured that you're learning from experts with hands-on experience in the craft.

Had a wonderful time with Omar, learning how to make makgeolli and then putting it into practice. He was a great instructor and took his time answering questions and giving us a great insight into makgeolli, how it’s made, and its importance in Korean culture. Highly recommended!

We booked this experience with my friend and had a great time with Inji at Sool preparing our first ever makgeolli. There was a bit of history, enough technical yet simple and clear instructions, preparation of the brew and alcohol tasting. And if you want to brew makgeolli again at home, you can buy nuruk (the wheat yeast ingredient needed for the drink) right there after the workshop. Definitely recommend if you like tasting new alcohol and would like to know how to make one yourself. 12 out of 10.

I am a home brewer with over 20 years experience fermenting many things, but I have not yet learned about making makgeolli before today. This is going to be one of my favorite memories of my Korea Trip this summer. I got a tour of the history and theory of Makgeolli and soju, hands on experience making a batch from scratch, a generous tasting of craft Makgeolli and soju, and wonderful conversation with the host. Plus tons of recommendations for local micro breweries (Nano breweries?) My only complaint is now I know what soju is really supposed to taste like.... :)

I went to the beginners brewing class and it was so fun. We were a small group but I went solo, I really enjoy the ambience and love to taste several makgeolli and spot the differences. The teacher was very patient and responded aaaall my questions, highly recommended!

We thoroughly enjoyed our experience at the Makgeolli making class. Our hostess, Eunji, was extremely informative, sharing lots of history and cultural context that provides great insight into the unique nature of what Makgeolli is today. Because it was in English, it is certainly geared towards visitors and I look forward to applying what I learned to my next batch!
