After years of fine dining and living out of mexico, I returned to my roots to create "The Real Oaxaca Cooking Experience."
At Quinta Brava, our dedicated team of three professional cocineras and the chefs is passionate about guiding you through an unforgettable culinary journey.
This unique experience aims to preserve and share the rich heritage of ancient Oaxacan cuisine. You’ll learn traditional cooking methods and use authentic utensils that our ancestors cherished. Under the guidance of our experts, you’ll prepare a variety of recipes from across Oaxaca on a traditional wood stove known as the "Lorena," crafted from mud and sand.

After reading so many positive reviews, I am sorry to say I was very disappointed by the Traditional Oaxaca Culinary Experience. It felt like we were off to a good start; Miguel began by questioning each of the eighteen participants about their interest in Oaxacan cooking and what they hoped to get out of the class. After each share, Miguel added his perspective, which in it's simplified form is that there is really no such thing as truly traditional cuisine in Oaxaca, which borrows heavily from other cultures and is open to improvisation and interpretation. Still, I would have preferred a more in-depth explanation of the evolution of Oaxaca ingredients and techniques since that was why I selected this course specifically. The first missed opportunity for some teaching occurred at the trip to the farmer's market. There, we were just given various fruits and vegetables to carry back to the kitchen with no explanations. I asked a few questions about items I was not familiar with, answered by our guide but it would have been preferable it our guide spoke enough English to tell the group what we were looking at. I didn't learn much more than I knew going into the experience. After returning from the market and an explanation of how masa is made, we divided into three groups to make tortillas. This is where another problem showed up; one of the groups was lead by a non-English speaker. As we made four recipes in these groups, the group with the non-speaker got demos but no explanation related to ingredients or technique. I don't know how Miguel's group was, but suspect maybe there was more relevant information shared. As I already have a lot of cooking experience, I would have liked MORE INFORMATION! You will cook a part of a dish, and not see how the other parts are done. There were tantalizing hints of information from Miguel which were never followed up on; which moles should be served with which proteins/ What are the various types of dried chiles and what are their uses? Short on actual teaching and explanations, which is what I as an experienced cook, come to a class like this for. It simultaneously felt rushed and not engaging enough to feel like essential information was being shared with the group. Beer and mezcal are freely available for the duration of the class, if that is your thing. If you are more interested in a culinary experience and less in education, you may enjoy this class more than I did. A couple things that we well done are the tasting of nine moles and their flavor profiles. However, not enough information given to recreate these at home. The staff is very competent and pulls everything together for the completed meal. The demonstration of the four essential cooking techniques used in Oaxacan cooking; boiling, frying, roasting and charring was instructive.

The day was a lovely experience, and it felt very relaxed which was nice. However, the final dish was quite disappointing, although we learnt how to make the sauces fresh, the meat was reheated from the day before so it wasn’t great.

What an incredible experience. A highlight of our trip. Excellent food, lots of fun, and a great day of learning. The whole thing lasted from 9am-3.30/4pm. They give you a small breakfast , so save room for all the deliciousness.

We were an international group of 8, all English speaking. It was a pretty little farm. We made tortillas , salsas, soup, moles and dessert under our chef’s excellent and informative guidance. We would not hesitate to repeat this class! Sign up!

This cooking experience is excellent - the hosts showed us their property and garden and then took us to the local market to gather ingredients for our meal. We started with coffee and quesadillas, and sampled 10 moles to then choose which two we would make together. We learned how to make tortillas from scratch, empanadas, molotes, a local soup, and two different moles. The chef is great and the food was delicious.

The class was amazing! We don’t typically do group things like this ever, but something about it changed our mind. And we are so happy it did. The entire group was just delightful. Chef was so fun and informative. We happily recommend to anyone who wants to learn about Oaxacan cuisine, the act of cooking it, history of ingredients; or if you just want to have a great time, lots of laughs, and maybe a few beers while you’re at it. It was an experience we very much treasure!

This class was incredible. A friend recommended it to us, and it absolutely lived up to the hype. We made traditional corn tortillas from scratch, learned about the history and cooking process of mole, explored new flavors, and gained a real appreciation for the food, from the ground to the table. Even in a group of 15, the experience felt personal and tailored to everyone’s tastes. The setting was beautiful, and we loved getting to wander around the farm and visit the local market to gather ingredients for our dishes. Miguel, the owner, was an exceptional teacher, engaging, knowledgeable, and truly passionate which made the whole experience one of a kind. It added so much to our time in Oaxaca and was a true highlight of our Mexico trip!

We loved everything about this class! We were picked up from Oaxaca center and taken to a small farm with beautiful garden and outdoor kitchen. We met Jose there and started to plan the menu - we set the menu according to our wishes, while drinking hot chocolate or coffee and eating the first course of the day. Next stop was the market where Jose got all od the needed ingredients. Cooking was so much fun, we made 4 dishes and we got a chance to try 9 moles - which was pretty awesome! The atmosphere was great and Jose was a perfect teacher - he is such a warm and funny person, we loved cooking with him so much! For the money you pay you really get so much food, but even more important you get a perfect day in Oaxaca!
