We’ll start this incredible journey with an early pick up (around 7:00am) in Bologna with our private minivan or minibus to head to the countryside between Modena and Bologna. Why so early? Parmigiano Reggiano doesn’t wait! It’s made only in the early morning and we want you to get in action ASAP! We will see the cheesemakers taking care of all the production steps right before your eyes. You can touch the creamy curd, taste the cooked cheese and get absolutely stunned by the warehouse, where thousands of wheels all around you wait at least 12 months to be “baptized” as Parmigiano Reggiano. Time to taste it, what’d you expect? Young or aged, creamy or crunchy, delicate or intense: you can decide which of the 2 different-age samples is your favorite… or just love them both!

Third and last excellence to meet: meat (pun intended)! Prosciutto Factory Montevecchio’s products will conquer your palate with its fragrant smell, buttery texture and delicate savoriness. We’ll learn about the strict regulations, the long curing process, and the tremendous care necessary to transform only 2 ingredients into a typical product with unique characteristics. We’ll taste its wholesomeness and genuineness with other local charcuteries and a glass of Lambrusco, before a proper lunch is served!

The most incredible day. Elena gave so much detail about the cheese, balsamic vinegar and proscuitto production. More than just simple explanations. The lunch at the end was over the top. The food kept coming and everything was delicious. The cook did an incredible job. Roberta was more than a driver she was a friend. The staff at the restaurant was just the best. So great to see a group of people who work so well together and enjoy what they do. It will truly be one of the great memories of my life.

Amazing day going to the factories to see behind the scenes. Informative and a lot of fun. Breakfast great but the Italian lunch was amazing you must go.

Terrific tour with Alessandro who kept us entertained and informed from the beginning. The parmaseano factory is extremely interesting and the production process more complex than we ever imagined. The tour at the family run basalmic production area and vineyard was fantastic and informative. The family was super accommodating and took plenty of time to explain their history. The Lambrusco (from their vineyard) and breakfast spread were awesome. The basalmic tasting brought to light the differences between real basalmico and the grocery store stuff. Our last stop at the prosciutto factory was also great but the least interesting of our stops. Still, it’s a once in a lifetime opportunity to see $35M worth of Jamon hanging from the ceiling. For the final part of the day we feasted and drank non stop at Alejandro’s restaurant. Everything was beyond great and abundant. We loved the entire day and are happy we chose Italian Days.

Alessandro gave us the best food experience tour I have ever been on. Went to two food manufacturers, had breakfast and an amazing lunch. Thanks we had an awesome time.
