Set amongst the unique and beautiful nature of the Basilicata countryside, the farmhouse was built using traditional and local materials. The farm includes over 2000 olive trees and around 300 orange trees as well as organic fruit and vegetable plots that provide eggplants, zucchini, tomatoes, artichokes, chicory, lemons, cherries, pomegranates and much, much more. Guests will learn to cook in the farm's professional kitchen.

Silvia, Greg and Agriturismo L'Assiolo invite you to your own personal cooking class set at a beautiful local organic olive and orange farm just outside of Matera in the Italian countryside. First up, a quick tour of the farm so that you can really understand where the food we use in this part of the world comes from. Learn all about our 'liquid gold', extra virgin olive oil, and how we produce it with our very own trees. What’s more, you’ll get the chance to eat some fruit straight from a tree - just like a real Italian farmer! Then, it’ll be straight into the kitchen where you’ll meet Silvia, the daughter of the family, who has had over 20 years of seeing her Mamma wow local and international guests with her traditional Matera, farmhouse cooking. You’ll learn the authentic, original way to make fresh pasta, a typical pasta sauce and also two typical dishes from Matera. From secret techniques to our philosophy of simplicity, this special experience in the countryside of Southern Italy will whisk you away to a side of Italy that is truly authentic.

We have just spent 36 hours or so in the company of Greg and Sylvia. Their care and attention has been outstanding. They are passionate, knowledgeable, kind and fun and you can't fail but to have an interesting, and tasty, time under their tutelage. I love to cook from scratch and even make my own pasta, but I have learned so so much and am inspired to put what I have learned into practice at home. Highly recommended experience! We were treated like out of town old friends and really learned a lot about authentic Italian food and farming culture from this wonderful family of multi generational farmers. We will definitely be keeping in touch and learning more from their social media platforms.

A truly memorable experience.Greg & Silvia so delightful.loved the history & story of the property, the tour was beautiful…so much passion & love.We were immersed in Silvia’s amazing cooking & knowledge of food. The day begins with Greg, who guides you through the property’s olive groves and fruit orchards while sharing fascinating insights into the rich history of Basilicata and Southern Italy. His passion for the land and its history and biodiversity sets the stage beautifully. You’ll even get to sample their “liquid gold” — olive oil that is so citrusy, delicate, and vibrant. Then you meet Silvia, whose warmth and authenticity immediately win you over. With her encouraging guidance, you learn to prepare handmade regional pasta, a tradition passed down from her nonna, alongside a simple yet exquisite sauce. Along the way, you’ll taste other local delicacies, each bite deepening your appreciation for the region’s culinary delights. The experience peaks with a delicious meal, where you sit down to savor the fruits of your labor. Silvia and Greg welcomed us onto their farm like we were family, and the entire experience was pure magic. I can't recommend this cooking class enough! Our day began with a wonderful tour. As we walked around, Greg shared so much insight into the farm's operations, especially the incredible olives they grow. Then, it was time to cook! We used the freshest ingredients, straight from the farm, to create an authentic local meal. It was not only fun but also the best food we've tasted in all of Italy! Silvia and Greg also introduced us to amazing products from other local farms, including plenty of red wine, making the experience even more special. We enjoyed a lovely family (2 adults, 2 teenage children) cooking experience with Sylvia and Gregg who were welcoming, patient and generous hosts. Would highly recommend the experience, it has been a real highlight of our holiday and insight into the local cuisine and history. We can’t wait to try to recreate the dishes when we get home.

Silvia and Greg truly go above and beyond to make this an experience not just a class. From booking and getting recommendations for the area to getting a tour of their agroturismo it felt like visiting friends and getting a sense of what it is like to be fully immersed in the Italian culture in Matera. Getting little delicious surprises even before the cooking class started was such a surprise and treat for us. This was our honeymoon and they truly made it unforgettable! The cooking class was fantastic Silvia taught with such care and was hands on making sure we got to experience not only pasta making but getting in the kitchen seeing all the ingredients and knowing where they came from! We can’t wait to be back one day and highly recommend anyone visiting Matera to book this class you will be so glad you did. Not to mention the meal we cooked was fantastic and again they surprised us with more local treats that were just wonderful including homemade desert from Silvia! Truly above and beyond!

We took the Matera cooking class with Sylvia and the farm tour with Greg. It was the highlight of our trip for our honeymoon. As people who enjoy cooking, we enjoyed learning about the history of the farm, how the ingredients were grown, and how to make some traditional southern Italy dishes. We also were able to purchase olive oil and wine from them to bring home. Definitely our best meal in Italy!

Met Greg and Sylvia at her familial home just outside of Matera. Tranquil location which was well thought out and supplied for our time together. Right on the “fattoria”. Some great tips for cooking! Lots of food too! Made multiple piatti to enjoy! Learned a lot about the region, Agritourismo and their passion for food and health. Real Basilicata! Real Italy! The topper was eating a fresh slice of lemon off the tree. 4 hours well spent!
