Set amongst the unique and beautiful nature of the Basilicata countryside, the farmhouse was built using traditional and local materials. The farm includes over 2000 olive trees and around 300 orange trees as well as organic fruit and vegetable plots that provide eggplants, zucchini, tomatoes, artichokes, chicory, lemons, cherries, pomegranates and much, much more. Guests will learn to cook in the farm's professional kitchen.

Get away from the hustle and bustle of the Sassi di Matera and discover a true Italian farm. Silvia, Greg and Agriturismo L'Assiolo invite you to your own personal cooking class set at a beautiful local organic olive and orange farm just outside of Matera in the Italian countryside. First up, a quick tour of the farm so that you can really understand where the food we use in this part of the world comes from. Learn all about our 'liquid gold', extra virgin olive oil, and how we produce it with our very own trees. What’s more, you’ll get the chance to eat some fruit straight from a tree - just like a real Italian farmer! Then, it’ll be straight into the kitchen where you’ll meet Silvia, the daughter of the family, who has had over 20 years of seeing her Mamma wow local and international guests with her traditional Matera, farmhouse cooking. You’ll learn the authentic, original way to make fresh pasta, a typical pasta sauce and also two typical dishes from Matera. From secret techniques to our philosophy of simplicity, this special experience in the countryside of Southern Italy will whisk you away to a side of Italy that is truly authentic.

From making fresh pasta by hand to cooking the most delicious food I’ve ever had, this class was a game changer. Sylvia has created an experience that was full of knowledge and a passion for food that truly left me wanting more!!!! I’m excited to try the new techniques and creativity she taught. After our time in the kitchen, we enjoyed a wonderful lunch with the food we had prepared. All of it paired with three types of regional wines that Greg taught us how to appreciate and enjoy. It was a feast and the best meal of the trip! If you’re looking for a true immersion in southern Italian food, this is it. You can also do a Food Tour that takes you to the places that only the locals know about! We were the only tourists there and Sophie and Greg brought fun and history to every stop. Just do it!

Extraordinary experience! Love and warmth from the first moment. Greg (an Englishman) and Silvia (a 4th generation Luccani) have mastered the arts of teaching cooking, along with imparting knowledge of wines and pairings, with love and fun. What a wonderful and memorable food journey! From learning how to make fresh pasta, to understanding the importance of flavor balance and its quiet simplicity, this cooking class was engaging and incredible. Beyond that, the continued food journey through Matera, Altamura, and beyond was nothing short of amazing. The expertise of Silvia's cooking and Sommelier Greg's wine tasting were enlightening. Every detail thought through, with heartfelt love. Best 3 of out of 14-days in Italy. Do not miss this! HIGHLY recommend.

What a fabulous day we had. Greg and Silvia made us incredibly welcome from the very start. We learnt so much about the local area and the wonderful food. We all thoroughly enjoyed the cooking class and learnt so much. I can’t wait to put it into practice when I get home. If I could have rated more than 5 stars I would. An outstanding day. This cooking class was one of the absolute highlights of our trip to Italy. We did the 4-hour class and participated as a family of three. From the moment we arrived, Greg and Silvia made us feel completely at home with their warmth and generosity. The knowledge that they shared with us is invaluable! The experience went far beyond cooking. We learned all about the history of their farm, about olive trees and the olive oil production process, as well as the customs, traditions, and history of the Basilicata region of southern Italy. Adding much depth and meaning to the experience. A moment we will never forget is how Siliva ‘softly’ explained (in a very Italian way) to my husband that pasta is not ‘noodles’ :). Also, after years of trying and failing, Silvia was successful in getting our daughter to eat zucchini and enjoy it. In addition to the amazing pasta Siliva taught us how to prepare, we were offered to try local cheese (with marmalade made from their orange trees), meat, and some cookies Siliva’s mom shared. Especially memorable was being offered dried figs that Silvia’s dad insisted we try (which were so delicious). The class was relaxed, hands on, and an experience like no other we have had in all the times we have visited Italy! If you’re visiting Matera, don’t miss this experience— Greg and Silvia offer far more than a cooking class, it’s a true taste of southern Italian culture and family hospitality.

If you’re visiting Matera and love food, do not miss the cooking class with Greg and Silvia—it was truly the highlight of our entire trip to Italy. This is so much more than a typical cooking class. You’re welcomed onto their beautiful farm and olive grove, surrounded by the very ingredients you’ll be using, many of which come straight from their land. Greg and Silvia create a genuine, immersive experience where you don’t just learn recipes—you learn the art of cooking. They take the time to explain the importance of each ingredient, the techniques behind the dishes, and the traditions that make the cuisine of this region so special. It’s hands-on, authentic, and incredibly rewarding. What really sets this experience apart, though, is Greg and Silvia themselves. They are warm, passionate, and truly wonderful hosts who make you feel like part of their family. It’s easy to see why they consistently receive 5-star reviews. We have just spent 36 hours or so in the company of Greg and Sylvia. Their care and attention has been outstanding. They are passionate, knowledgeable, kind and fun and you can't fail but to have an interesting, and tasty, time under their tutelage. I love to cook from scratch and even make my own pasta, but I have learned so so much and am inspired to put what I have learned into practice at home. With her encouraging guidance, you learn to prepare handmade regional pasta, a tradition passed down from her nonna, alongside a simple yet exquisite sauce. Silvia and Greg welcomed us onto their farm like we were family, and the entire experience was pure magic. I can't recommend this cooking class enough! Our day began with a wonderful tour. As we walked around, Greg shared so much insight into the farm's operations, especially the incredible olives they grow. Then, it was time to cook! We used the freshest ingredients, straight from the farm, to create an authentic local meal. It was not only fun but also the best food we've tasted in all of Italy! Silvia and Greg also introduced us to amazing products from other local farms, including plenty of red wine, making the experience even more special.
