After several years cooking fine dinning and living in scandinavia for some years my mind was changed.. so, I decided to go back to roots and create "The Real Oaxaca Cooking Experience" Quinta Brava has a team of 3 professional cocineras and 2 professional chef eager to help you to solve your doubts and guide you across your cooking adventure. with this project Quinta Brava tries to recover and pass the knowledge and the heritage from the real ancient Oaxaca cuisine and the magic with it, also, to show you the ancient methods and utensils that our older relatives used to use with our team, you will cook a nice bunch of recipes from all over Oaxaca in a old fashioned wood stove called "Lorena" the name came cause the way how is been constructed (in Spanish "lodo y arena" in English "mud and sand") and you will be the main chef of this culinary experince, you will cook everything with your hands

we will teach you how to cook Oaxacan ancient traditional cuisine in a real "cocina de rancho" using wood for cooking our meals. the class is completely and 100% grupal hands on class, you will be the main chef of this cooking experience so you can have the chance to reproduce whatever you decide to cook here, all over the world. in the same way how people share knowledge with me, I will share all this knowledge with you with a bunch of recipes to follow an reproduce at home

I really enjoyed my class with Mike, and took away a lot more confidence and tips for back home. We even decided the menu around what I liked, and also what ingredients I should be able to find in Australia. I ended up being the only one there due to some late cancellations, so I got the opportunity to do the whole thing in Spanish which was great for my practice! I loved how we went to the garden to pick stuff, then walked out to the local market to buy things which we didn't have. It was a great experience reflecting making the most of farm and seasonal ingredients. In the end, I got to sit down and enjoy the meal with the whole family which was great given I was travelling solo. I looked at a few different tours, and I'm really glad this is the one I ended up picking.

Great experience, would recommend 100%. Chef was amazing, super hands on and knowledgeable about Oaxacan cooking methods. Welcomed us into his beautiful home and courtyard where we enjoyed many beautiful dishes we all enjoyed together. He even went as far as making sure we made our flight home on time and will remember the experience for many years to come.
