Amy’s Japanese Knife Masterclass was absolutely fantastic. From the moment we arrived, Amy made us feel welcome and comfortable. The whole team had such warmth and passion for Japanese cuisine and it really shone through. We learned proper knife techniques, the art of slicing sashimi and cutting veggies for the tempura. It was hands-on, well-paced, and surprisingly fun (with plenty of laughs along the way). The food we made was genuinely delicious, restaurant-quality and Amy explained the cultural background behind each step, which made the whole experience feel really special. If you’re in Tokyo and want to do something authentic, interactive, and delicious, this class is a must. Highly recommend it!

Amy was a fabulous guide. So funny! The knife techniques for cutting vegetables was really good fun. And learning the knife sharpening was really valuable.

I had a friend who loves cooking come to Japan, so I decided to join because it was a knife sharpening experience where you could learn directly from a Japanese chef. In conclusion, it was a very enjoyable and educational tour. Even I, a Japanese, was surprised to see how professional sharpening techniques were scaled completely differently. I felt the awesomeness of the craftsmen. The shop staff were friendly and the guides who accompanied us on the tour were kind and had a great time.

The chef was incredibly knowledgeable, which made the whole experience very enjoyable. The decorative cutting was a bit difficult for me, but that actually gave me even more respect for the chef’s skills. On the other hand, I felt like I could try the sashimi cutting at home, and I’m excited to do it myself in the future. Our tour guide was also very kind and attentive. Since she was a local, she shared a lot of interesting stories and insights about the area, which made the day even more special. I loved that they deep-fried the ingredients we cut ourselves—it felt so rewarding, and of course, everything tasted amazing! The lunch was quite filling, so I recommend going with an empty stomach.

The chef was passionate and patient, teaching us how to sharpen and use Japanese knives. Our guide explained the history in a fun way, and Nishi Koyama was the perfect place to experience it all!
