I’ll bring you along a complete tour to discover all the steps of Parmigiano Reggiano’s production. We’ll see where the animals are bred and where the milk is mould. We’ll go into the cheese factory during milk processing and we'll witness in cooking and making cheese wheels. We’ll see then the process of salting and maturing up to enter the huge “caveau”, where thousands of cheeses wheels are guarded and laid out in long rows in the silent maturation rooms and where the scent of cheese will smell so nice and exciting that we won’t be able to resist till the final tasting of cheese.
on this special tour you will be able to touch the newborn calves on our farm which happens almost every day.
you will taste the original king of cheeses and many other local artisanal products such as real balsamic vinegar aged over 30 years and parma ham and lambrusco wine
and at the end you will take home with you a piece of real Parmiginao Reggiano aged for 24 months included in this tour

Farm with cows milked and newborn calves. We’ll see the places, where the animals are bred and where the milk is mold. If we are lucky we will see a newborn calf it often happens in the morning.

Would like to say a big thank you to Claudio, the tour was fun, knowledgeable and interesting. Claudio explained everything about the making of Reggiano Parmigiano with a laugh along the way. Would highly recommend to do this tour, absolutely loved it.

This was one of the best tours I’ve ever been on. Claudio was so connected to the production of cheese through his family, as well as balsamic and his passion for both showed throughout the tour. I learned so much and now know all of the rules and time required to make both of these products. I would recommend this tour to anyone, especially if you love cheese or balsamic vinegar. The smell in each of these rooms alone was a highlight of my trip to Italy.

Claudio and his service were absolutely fantastic. From the organization and transportation to the attention to every detail, everything was perfectly arranged to ensure we had a unique and complete experience. It started with morning coffee and ended with a delightful tasting in the afternoon. We visited magical places and truly felt like the protagonists of the journey. Claudio shared each part of the process with passion and depth, making it even more enriching. The products we tasted were of the highest quality, each one holding stories and secrets well worth discovering. He also created a warm and welcoming atmosphere within the group — being small and child-free allowed us to enjoy the experience peacefully and fully. Highly recommended!

Don't pass up on this opportunity to spend the day with Claudio! He made the experience both enjoyable and informational! From the begining, his communication was prompt and clear. He asked where we would be arriving from, told us which train we needed to be on which kept us from having to do any extra planning. He picked us up at the train station and we drove to the charming bed and breakfast location that served as our base. There we had coffee with the group. It was nice to have time get to know each other a bit before spending the day together. Claudio gave a beautiful background of Reggiano Reggiono ;), the region, the wine, the balsamic vinegar and the salumi throughout the day. His love for this region and his connection to it is quite evident! Claudio's sense of humor, the cheese factory, the farm, the pace of the day and the small group size really made this experience a 10/10. I'm looking forward to returning to the area and will bring more family back for this experience. If you have any interest in the region and all it produces, Claudio is your guy!
