When we first arrived in San Miguel de Allende, the only thing I missed was good cheese. It took some time and effort, but I finally discovered several superb local artisan cheesemakers hiding in plain sight.
Known as the Empress of Cheese, I've been studying the art and science of cheese for over 20 years in Canada, the US, France and in Italy and have spent the last few years exploring the culture of Mexican cheese, specifically, artisan made European style cheeses. Now I share my knowledge and the divine cheeses I've found with others.
Come learn about the rich history of European influences in Mexican artisan cheese and where to buy, how to serve and pair these cheeses with drinks and condiments and how set up a French inspired cheeseboard. Everything is sourced locally from the artisan cheeses to the herbs, flowers, honey and other ingredients used in the class.
The class is held in our home with a view over the city with the beautiful pink marble Parroquia in the center.

We start off the class enjoying several cheese based appetizers and a beverage and then settle into our places at the table. After introductions, we begin with an overview of the history of cheese, specifically in Mexico, and learn about the generations of French cheese makers who have made Mexico home for hundreds of years. We'll discuss how cheese is made, the styles of cheese and what the differences are between commercial and artisan cheeses. And then to the best part, the cheeseboard. We'll set up a large French inspired cheeseboard with a dozen local artisan cheeses and pair them with condiments made in and around San Miguel de Allende such as membrillo, cajeta de Celaya and miel de azahar, orange blossom honey. You'll learn how to set up a cheeseboard and where and how to buy, serve, cut, pair and store cheese. We'll serve several drinks and teach you the rules of pairing them with different types of cheeses. And of course as we go around the cheeseboard, you will taste each of them, learn about the cheese makers, cheese mongers and where to buy the cheeses here in Mexico. We'll finish the class with a cheese based dessert.

Attending Tonya’s cheese tasting experience (clsss?, event? - don’t seem apt to describe it) was for me a mini vacation from my typical routine, being transported into a different world for a couple hours - beautiful home, opening out to beautifully set tables looking out at a beautiful garden - you get the idea, As I am sure mentioned in other reviews: the delicious buffet, 3 course cheese and wine courses and accompanying information plus the opportunity to visit with table mates all made for a delightful afternoon. I have also been to a couple farm visits and cheese tastings that were a lot of fun and I look forward to going on more.

From the moment we stepped in, we knew this was going to be something special. The Empress of Cheese welcomed us with warmth, humor, and a passion for her craft that shines through every bite. She guided us through a generous tasting of incredible cheeses—each one more delicious than the last—while sharing the history, stories, and secrets behind them in a way that made the experience both fascinating and fun. As if that weren’t enough, her husband paired each cheese with the perfect wine. Every sip elevated the flavors and gave us a deeper appreciation for the art of pairing. The two of them together created an atmosphere that was equal parts educational, indulgent, and downright delightful. This isn’t just cheese and wine—it’s an experience. One that leaves you savoring every bite, every sip, and every story. If you love good food, good company, and leaving a little happier (and fuller!) than when you arrived, The Empress of Cheese is a must. ⭐⭐⭐⭐⭐ Easily one of the highlights of our trip!

I have indulged in 4 experiences with Tonya and Nick. Two cheese and wine pairings at their beautiful home, a goat farm, and the latest, a delicious lunch event at a Villa in the hills of San Miguel. We easily could have been in Tuscany. The setting and food made it so. Each event is different. The attention to detail is flawless. I will continue to attend future events as these are true experiences you won't easily forget.

My husband and I recently attended Tonya’s event “Under the Tuscan Sun” and had a delightful time. This event was held at a venue outside of San Miguel and the transportation was well thought out and organized. The venue provided a beautiful backdrop for the afternoon festivities. We started with a glass of bubbly by the pool along with a shared cheese tray. The ice breaker provided an opportunity to get to mingle with the owners and our fellow guests. This was followed by a tour of the estate and a chance to peruse the lovely housewares and more for sale by the owner. The experience culminated with a gourmet lunch served in a beautiful garden overlooking the valley…just breathtaking and lush with all the recent rain. The meal was prepared under the tutelage of Laura at Sikelia, highlighting her Italian heritage and including made from scratch products and a delicious pasta dish. The icing on the cake was an exquisite lemon zest and blueberry cake. Throughout the afternoon, Tonya and her husband Nick remained attentive to every detail. Best of all, there was an eclectic group of guests affording the opportunity for lively conversation. Without hesitation, I would highly recommend any event orchestrated by Tonya. My husband and I look forward to attending another adventure soon! Many thanks Tonya!

This event is in her home, which is lovely with great view over the city. Tonya has a love of cheese and her husband has a love of wine, so we had great cheese and wine pairings. We learned so much from Tonya! She shared the history of cheese, how various cheeses are made, and we sampled something like 8 different cheeses. Really enjoyed our visit!

What another delightful class with Tonya ! The class was on Italian cheeses made locally in Mexico . It was informative and quite delicious. We started out with an assortment of wonderful Italian appetizers followed by a tasting of the cheeses alongside local wines . Tonya knows her cheeses and it was fun to get a history behind them . We ended with a really wonderful pistachio cake and some ice cream . I highly recommend any class that Tonya teaches . Her home is beautiful with views of the city .

If you want to learn about the little known but delicious world of Mexican cheese, treat yourself to a class with Tonya. Not only is she is knowledgeable and enthusiastic but her tastings are generous and beautifully presented. The wine pairings are selected to highlight the cheese but also local wineries. Tonya and her husband Nick are warm, charming hosts and their home is beautiful. I was in the wine and food world for many years in New York and California and my afternoon with Tonya did not disappoint. “Come hungry” is her recommendation but also be prepared for an extraordinary experience.

Tanya and Nick are such fantastic guides on your adventures with cheese. It’s so wonderful to enjoy a tour with film who truly love what they do. This was my second class and I keep learning more and more each time. If you like cheese you will love this immersive experience and tasting your way through the flavors of creamy and funk. A not to miss experience while visiting San Miguel de Allende! The setting was spectacular, the cheeses ( 15 different local Mexican cheeses) were superb, and the accompanying dishes ( including dessert) were delicious! Tonya ( the Empress of Cheese) is a wonderful hostess and her knowledge about local cheeses ( and those around the world) are unsurpassed! Such a fun, enjoyable, and delicious activity to do in SMA!
