WOW. This is the most unique food tour we have ever been on. If you and your friends have a passion for how all the delicious Vietnamese foods end up on the many food carts, restaurants and ultimately in your bellies, this tour is for you. To begin, Chef Duyen took us to the Cho Long Bien night market. The tour starts up at 4AM, when you can get the sense of madness as all of Vietnam/Hanoi converges here as whole-sellers and commercial buyers meet up to strike up deals. Chef Duyen picked out choice samples of ingredients that are unique and in season to nibble on. She explains how the entire seller/buyer system works, her many years of experience in the wholesale market and how it influenced her as a chef. Chef Duyen then takes us to some hidden food cart vendors way outside of Old Quarters where "the locals dine". From sticky rice balls to local's favorite Vietnamese egg coffee, chef leads us to places that are aren't frequented by travelers. We end up dining at Chef Duyen's cooking classroom/dining room with all of the foods, where we all were able to share a bit of our lives with her in a short period of time. It was a perfect end to an amazing tour. I recommend you book this tour in the middle of your Hanoi stay so you can rest up from your jetlag and before you spend your crazy late nights drinking and dining. If you are easily sickened by sites and smells, this tour is not for you.
