What a beautiful, wholesome and enriching experience. We adored Miyuki, she is so knowledgable about miso, its origins and passionate about the importance of fermentation in the modern japanese diet and diets in general. We came to this as restaurant owners/chefs and with a strong background in ferments but found she adapted the class to our level. The lunch with the vegetable sommelier afterwards was to die for. We are vegan and they made all 5 courses vegan. It was one of the best meals we had in Japan, beautiful subtle flavours and also gorgeous plating. If you love food and ferments, this was one of the best experiences we had in Japan, and well worth the time and money. Thank you Miyuki for being so generous, genuine and sharing your love for miso with us :)

The pursuit of trying something new had me stumbling upon the "Shiro Miso Making Tour" by Miyuki Toko. I went early since it was raining that day. This gave me a few extra minutes to talk with Miyuki san. Once everyone arrived we started with the tour. Miyuki san began with a presentation to help us with the basics. She spoke about the history of Miso, the various types of miso and how it is beneficial to our gut health. While going on with the presentation we also made our miso. I named mine as "Lisa". It was a lot of mixing and punching. I was exhausted after the process. It was fun. After learning the traditional way of making miso, Miyuki san cooked Tofu Miso Potage Soup for us. This is her original recipe. Now comes my favourite part - Eating! The menu is in one of the photos below. The chef kept on bringing various dishes. I wish it had never stopped. While discussing various topics we savoured the delicious lunch. And soon the tour was finished. As a gift, Miyuki san gave us a packet of her Miso Pota Soup. I am thankful to Miyuki san for the tour. Hope you guys will try her Miso Pota soups from Amazon.

It was a pleasant experience! Miso making workshop was a surprise from my friend who lives in Japan, and for me, as a first time visiter, it was a perfect opportunity to understand better the culture of the country ! Soft guidance of master made process simple and fun. She gave us a bit of theory and history, but concentrated more on practice along with tasting of different types of miso. We left with ready made paste, and now I only have to wait till it is ready 😋

This was one of the most authentic and enjoyable experiences I’ve had in Japan! I learned so much about miso and now feel confident making my own miso paste at home. It was incredibly rewarding to create something from scratch with my own hands while learning traditional recipes firsthand. The class was well-organized, informative, and fun—perfect for anyone interested in Japanese food and culture. And the lunch after that was simply amazing. Will definitely come again just to enjoy exquisite Kyoto cuisine. Highly recommended!

Recently, I had the pleasure of participating in a white miso workshop that provided not only a hands-on experience in crafting this delicate seasoning but also a deep dive into the world of Japanese miso. Delving into the Depths of Miso The workshop commenced with an insightful lecture on the history and cultural significance of miso in Japan. We explored the various types of miso, their regional differences, and the intricate process of fermentation that gives miso its unique flavor profile. The lecturer's expertise and passion for miso were evident, making the learning experience both educational and engaging. Crafting White Miso from Scratch Following the lecture, it was time to put our newfound knowledge into practice. We were provided with high-quality soybeans and koji, the essential ingredients for white miso. Under the guidance of the experienced instructors, we embarked on the journey of transforming these simple ingredients into a flavorful paste. The process was meticulous, involving soaking, steaming, and mashing the soybeans, followed by the careful incorporation of koji and salt. The alchemy of fermentation was explained, and we were taught the importance of maintaining the right temperature and humidity for optimal results. A Culinary Symphony of Fermented Delights As the workshop drew to a close, we were treated to an exquisite multi-course lunch showcasing the versatility of fermented foods. Each dish was a masterpiece, highlighting the umami-rich flavors of miso, vinegar, and other fermented ingredients. The lunch was not merely a meal but a culinary symphony that tantalized our taste buds and deepened our appreciation for the art of fermentation. Whether you are a seasoned foodie or a curious traveler, this workshop is an absolute must-try. It is an immersive and educational experience that will leave you with a newfound appreciation for the art of miso making and the rich culinary heritage of Kyoto.
