I'll give you all the ingredients, equipment and guidance you need to prepare two types of mole. There'll also be dessert, but I'll prepare that before you arrive.

At the beautiful Condesa home of your knowledgeable guide, explore the extraordinary diversity of Mexican moles before donning an apron and preparing two of the dish’s most delectable iterations from scratch. Around two hours later, set the table with beautiful, locally-made dinnerware and enjoy a decadent manchamanteles, which has similar ingredients and processes to world-famous mole poblano but draws sweetness from generous chunks of pineapple and plantain instead of chocolate, and an uplifting green mole, with a base of crisp green spinach, cilantro, parsley and epazote that will be a refreshing change from the heavier moles you’ve tried before. Most dietary requirements can be accommodated. Wheelchair users have attended the class before, but the building doesn't have an elevator. Allergy sufferers should know that there are two cats in the house. Travelers taking their class on the rooftop of the art gallery must check their inbox after booking for details of the location. Guests should be aware that others may pay less for the same experience by booking via the Martaja website.

Excellent class- learn all about selecting and preparing mole. I had no idea what goes into making these complex and delicious sauces. There are alot of ingredients, but our instructor walked us through and made it all seem so simple to create amazing dishes. Highly recommend this experience to fully appreciate Mexican cuisine.

Loved our mole cooking class with Jim! We learned so much and got to make two different types of mole, along with homemade tortillas, in the class. Jim was so kind and knowledgeable, and had some extra touches to make our class special since we were celebrating my birthday. Thank you!!

You very well arranged and organized tour in the chefs private apartment. Learned a great deal about making two kinds of mole, and the resort was delicious. Also learned a lot about the food culture in history of Mexico. Highly recommended!

Jim made the class very interesting, quite informative and basically real fun. Both the tamales and the moles that we made during this class under Jim’s close supervision were unbelievably tasty. Very highly recommended!

This was a great experience! I appreciate that he was prepared and knowledgeable about the food and the culture. The food was seasoned perfectly and the mole was excellent. I can't wait to try making it by myself. I highly recommend anyone to take this class.

I loved the experience, I went with my partner and my cousin and we had an incredible time. Jim generates a warm and very fluid atmosphere, in addition to sharing his tips and recipes without any "buts" with step-by-step explanations. The pipián and stain tablecloths were delicious and the experience from the moment we arrived to the dessert that Jim prepared for us was wonderful. Highly recommended; We are Mexican and we will definitely go to more classes with Jim.
