We start with the history and process of making chocolate, and the impact of the Mayan culture within its development. Then we roast some cacao beans so that each participant dehusk their own seeds. With the husk we make a hot cacao infusion. The beans are molished and collected to make a drink with honey, chili and a secret ingredient, the way mayans used to drink it. We make another drink with milk, cinnamon and cloves, the way it was enjoyed in Europe back in the days. We proceed to a sample test of all of our chocolates, from 100% cacao, to 90%, 80%, 70%, milk and white chocolate. At the end, each participant gets 70g of melted chocolate to mold their own bombons. You can add different toppings on them.

This class was very fun and informative. Jessica is friendly, knowledgeable, high energy, and funny! We learned about the history of the cacao fruit and its evolution into the different forms of chocolate we know. We made our own little candies as souvenirs. We also got the opportunity to smash and grind beans to make paste and powder.
